Picanha is the cap of the top sirloin, a triangular cut crowned with a thick band of fat that bastes the meat as it grills over open flame. Churrascarias grill it on long steel skewers over charcoal and carve it at your table, which is why it anchors every rodizio service. At 12 Cuts Brazilian Steakhouse in North Dallas, it is the cut most guests flag down first.

Food & Wine named picanha its new favorite cut for grilling back in 2024, largely because it delivers serious beef flavor at a friendlier price than skirt or hanger steak. American demand has climbed ever since, and North Texas took to churrasco early, so the Dallas dining scene is one of the better places in the country to taste the real thing.

What Is Picanha?

Picanha is the cap muscle that sits on top of the sirloin, right where the back of the animal meets the rump. American butchers usually label it the top sirloin cap or coulotte. British butchers call the same muscle the rump cap. A whole picanha weighs between two and three pounds, which makes it small enough to grill whole yet large enough to feed a table.

The defining feature is the fat cap, a layer roughly an inch thick that stays attached through cooking. As the meat grills, that fat renders down and bastes the muscle underneath. French butchers trim the cap away for coulotte steaks, and the cut loses much of its character in the process.

Spotting the real thing is simple once you know the shape. A proper picanha is a rough triangle with an even fat cap across the whole surface. Larger pieces often include part of a neighboring muscle that cooks tougher, which is one reason the cut rewards an experienced hand at the fire.

What is picanha called in the USA?

Look for top sirloin cap or coulotte steak at American butcher counters. Some shops label it rump cover or sirloin cap steak. Around Dallas it often gets broken down into smaller sirloin steaks before it ever reaches the display case, so finding the intact cut can take some hunting.

What does picanha taste like?

Picanha tastes intensely beefy, with a clean mineral edge closer to sirloin than to ribeye. The texture lands in the middle: firmer than tenderloin, yet noticeably juicier than a standard sirloin steak because of the rendering fat cap. Slices come off the skewer thin, so each bite carries a strip of that golden fat along the top edge. At 12 Cuts, that flavor comes with a choice of finishes, since the kitchen seasons its picanha with either sea salt or garlic.

How Picanha Is Seasoned and Grilled the Churrascaria Way

Traditionally, picanha is cooked over charcoal on long steel skewers. Each portion is cut thick, folded into a C shape with the fat cap facing outward, then threaded onto the skewer so the fat shields the meat from the flame. Nothing else touches it except coarse salt.

That restraint is the whole point. Coarse rock salt draws flavor to the surface without masking the beef, and the rendering fat does the work a marinade would normally do. The tradition comes from the gauchos of Rio Grande do Sul in southern Brazil, cattle herders who cooked over open fire pits and let salt and smoke handle the seasoning. They were grilling picanha this way generations before the style reached Texas.

The skewer also solves picanha's biggest cooking problem: doneness. The lean interior dries out fast past medium, so slices come off the outside while the center stays closer to rare. The skewer then returns to the fire, and the next pass around the room offers a fresh set of slices at a fresh level of doneness.

At 12 Cuts on Dallas Parkway, gauchos work the picanha skewers through the dining room all evening and carve against the grain at your table. Ask for an end piece for extra crust, or wait a round for a rosier center slice.

Why Picanha Anchors the Rodizio Experience

Rodizio means rotation. You pay one price and flip a table card to green. Skewers then arrive in a steady procession until you flip the card back to red.

Picanha sets the benchmark inside that rotation. The cut hides nothing behind a marinade or a crust of spices, so the quality of the beef and the discipline of the grill are on full display. A churrascaria that gets its picanha right, with the fat rendered and the center still blushing, has usually got everything else right too.

The rotation at 12 Cuts runs twelve cuts deep, which is where the restaurant gets its name. Filet mignon and lamb make the rounds alongside pork ribs and sausage, yet picanha remains the skewer regulars watch for. Many order a caipirinha and time their evening around its next pass.

Warm Brazilian cheese bread lands early, and hot sides follow the meat service through the evening. Treat them as supporting cast. The skewers are the show, and picanha is the headliner.

Pacing matters more here than at a conventional steakhouse. Start light at the Market Table salad bar and keep your card red until you settle in, because most first-timers fill up before the second picanha round reaches them.

Why Picanha Anchors the Rodizio Experience

Texans grow up on ribeye and brisket, so the fastest way to understand picanha is to set it beside the cuts you already know.

CutWhere it comes fromFat profileEating experience

RibeyeRib sectionHeavy internal marblingRich and buttery from edge to edge
Filet mignonTenderloinVery leanSoftest texture of any steak with mild flavor
Tri-tipBottom sirloinModerate marblingFamiliar Texas barbecue flavor from the same region of the animal

Is picanha a good cut of steak?

Yes, and the value argument is strong. Picanha delivers flavor in ribeye territory from a cut priced like sirloin, and one whole piece can feed a full table. Food & Wine highlighted exactly that trade in 2024, at a time when other butcher favorites were pushing past painful price points per pound.

The catch is forgiveness. Ribeye's internal marbling protects it from an extra minute on the grill, while picanha carries its fat on the outside and dries out quickly once overcooked. Tableside carving removes that risk, since every slice at 12 Cuts comes off the skewer at its peak rather than resting under a heat lamp.

Beef ancho, the ribeye on the 12 Cuts rotation, makes the rounds during the same dinner. Order both and run the comparison yourself.

Why Picanha Is Hard to Find in American Steakhouses

Picanha never became popular in America because of how the carcass gets broken down. American processors split the top sirloin into steaks and roasts for the retail case, so the cap usually gets trimmed away or divided into smaller cuts before it can be sold intact.

Shoppers never asked for it by name, so stores never stocked it. Marbled middle cuts like ribeye and strip claimed the premium shelf space instead. Restaurant menus followed the retail case. The result is a loop where one of the most loved cuts in South America barely registers at a Dallas grocery store or on a conventional steakhouse menu.

The tide is turning slowly. Brazilian-owned grocers and online butchers now stock whole picanha, and food media attention keeps growing. Cooking it well at home is still another matter, since that fat cap throws flare-ups that can turn a backyard grill session in July heat into a fire drill.

This is where a churrascaria earns its keep. 12 Cuts serves picanha every night of the week, cooked over fire by people who have carved it thousands of times, with no specialty butcher hunt required.

Picanha at 12 Cuts Brazilian Steakhouse

12 Cuts is a family-owned churrascaria at 18010 Dallas Parkway in North Dallas, built around the tableside carving tradition of southern Brazil. Picanha leads the twelve-cut rotation that gives the restaurant its name, seasoned with sea salt or garlic and carved off the skewer at your table. The full lineup sits on the dinner menu, alongside the Market Table salad bar and traditional Brazilian sides.

Dinner runs seven nights a week. Lock in reservations a day or two ahead, then come hungry. The first picanha pass usually reaches the table before your salad plate is cleared.

There's a version of the Fourth where you spend the afternoon scraping a grill, guessing whether the chicken is done, and missing half the fun because you're stuck behind a cloud of smoke. And then there's the version where someone else fires up the grill, brings the food straight to your table, and you actually get to enjoy your own party. This year, 12 Cuts Brazilian Steakhouse is making the case for the second kind of holiday.

The Fourth lands on a Saturday in 2026, a full day to celebrate before the fireworks start. Here's how to make it count.

Let the Gauchos Run the Grill

Open-flame cooking is the soul of Independence Day, and it's also what we do every single night. As a Far North Dallas churrascaria, we turn grilling into a tableside event: our gauchos carve cut after cut right at your table, served at whatever pace your appetite sets. Start with the signature picanha, the prized top sirloin cap Brazilians treat as royalty, then keep going through filet mignon, ribeye, lamb, and house-made sausages, each one seasoned simply and grilled over open flame.

It's everything you love about a backyard cookout, minus the part where you're the one cooking it.

More Than Meat

The fire gets the headlines, but the supporting cast earns its place. Our market-fresh organic salad bar gives everyone at the table something to graze on, the rotating hot specialty sides round out every plate, and the warm Brazilian cheese bread has a way of disappearing before the main event even arrives. Pair it all with a pour from our wine display, and a simple dinner turns into a proper celebration.

Hosting at the Pool? Take It to Go

Not everyone wants to leave the lake house or the backyard on the Fourth, and you don't have to miss out. Order ahead and bring 12 Cuts Steakhouse to your gathering, whether you build a spread from our fixed Family Menus or pick and choose from the full takeout menu. Load up on the sides, grab extra grilled pineapple, and you've got a holiday feast without anyone breaking a sweat over a grill.

Save Room for Something Sweet

No celebration is complete without dessert, and ours are worth the willpower. Finish the day with tres leches cake, silky creme brulee, or rich chocolate mousse cake. Bringing a crowd? There's no rule that says you have to pick just one.

Book Before the Fireworks

The 4th of July is one of the busiest nights on the summer calendar, and the best tables go early. Whether you're planning an intimate dinner or gathering the whole crew, reserve your spot now — and if a private celebration is more your speed, our group dining team can help you plan it. Holiday hours can shift, so call ahead to confirm before the big day.

This Independence Day, trade the apron for a seat at the table. The flavor of a great cookout is waiting at 12 Cuts, no smoke, no scrubbing, just good food and even better company.

In Dallas for a FIFA World Cup 2026 match at AT&T Stadium and looking for a meal that actually matches the occasion?

Skip the concourse food and make a proper night of it. 12 Cuts Brazilian Steakhouse, the Dallas-Fort Worth area's authentic churrascaria, is built for exactly the kind of celebration a World Cup brings, and for the six weeks the tournament is in town it's one of the most natural places in the metroplex for football fans to gather, eat, and toast the result.

Dallas is a World Cup city this summer

Between June 14 and July 14, 2026, AT&T Stadium in Arlington hosts nine FIFA World Cup matches, making the Dallas-Fort Worth area one of the busiest hubs of the entire tournament. That includes group-stage fixtures, a Round of 16 match on July 6, and a semifinal on July 14, the kind of schedule that brings hundreds of thousands of visiting fans into the metroplex.

For South American supporters in particular, Dallas is a focal point. Argentina is set to play in the area twice, on June 22 and June 27, and the surge of fans following the tournament through North Texas creates a genuine football atmosphere across the city for the better part of a month. (For more on planning around the games, see our guide to match-day dining in Dallas for 2026.)

Why a Brazilian steakhouse is the right call for football fans

There's a reason a churrascaria feels like the natural home for World Cup dinners. 12 Cuts was founded by Juarez De Conto and Alda Boiani, a Brazilian husband-and-wife team who moved to the United States in 1997 to help bring the churrascaria concept stateside and opened their own place after 30-plus years in the business. That heritage shows up in the way they do hospitality: gathering with people you care about, taking your time, and celebrating together over an abundant table.

The rodízio (all-you-can-eat) format means there's no rushing, no individual ordering, and no one left waiting. Gauchos bring skewers of fire-roasted meats to your table and carve them tableside until you tell them to stop. For a group of fans coming off a match, or building up to one, that's exactly the energy you want. Whether your side won or lost, the table keeps coming, the wine keeps pouring, and the conversation never has to pause for a server. And for the South American supporters making Dallas their base this summer, the Brazilian-churrasco tradition is a taste of home no other steakhouse in the area can offer.

Frequently asked questions

Where's the best Brazilian steakhouse to celebrate the World Cup in Dallas? 12 Cuts Brazilian Steakhouse in North Dallas is the area's authentic churrascaria, with twelve fire-roasted cuts carved tableside plus an organic salad bar, a full bar, and the kind of festive, group-friendly atmosphere that suits a World Cup celebration. It's a destination dinner worth planning your match day around, before or after the game.

How far is 12 Cuts from AT&T Stadium? 12 Cuts is at 18010 Dallas Parkway in far North Dallas, roughly 30 miles across the metroplex from AT&T Stadium in Arlington. Plan on about 40 to 45 minutes' drive in normal traffic, and build in extra time on match days, when stadium crowds and road closures add to it. It's a deliberate destination dinner rather than a quick stop near the venue, so we recommend making it the centerpiece of your evening.

Should I go before or after the match? Either works, but given match-day traffic, many fans find it easiest to come the night before a game or to plan a relaxed post-match dinner once the stadium crowds have cleared. The churrasco format lets you eat at your own pace, so it's an easy way to celebrate the result.

Do I need a reservation during the World Cup? Yes, strongly recommended. With this many visitors in town across six weeks, the best tables go quickly, especially around match days. Reserve your table here or call (469) 327-8903 .

Is a Brazilian steakhouse good for a group of fans? It's ideal. The rodízio format means no menu deliberation and no waiting on individual orders. Gauchos carve premium cuts tableside until everyone's full, so a big group eats together at the same pace. 12 Cuts also has private group dining space and an open bar area with communal seating for larger parties.

What to expect at 12 Cuts Brazilian Steakhouse

If you've never been to a Brazilian steakhouse, here's the short version. You'll start at a generous organic salad bar with seasonal vegetables, specialty sides, and traditional Brazilian options, then flip your table card to green to signal the gauchos to begin. From there it's a continuous parade of twelve cuts carved tableside: picanha (the prized top sirloin), filet mignon, bacon-wrapped filet, tomahawk ribs, fraldinha, beef ancho ribeye, leg and rack of lamb, pork ribs, parmesan pork loin, Argentinian chorizo, and organic chicken. Flip the card to red whenever you need a breather. There's a full wine list and bar too, so you can pair your meal with a Malbec or a caipirinha. (For the full lineup, see our dinner menu.)

It's a meal built for a group, which is exactly why it fits a World Cup trip so well, whether you're traveling with family, friends, or a whole supporters' section.

Why Churrasco is THE Father's Day Meal

Most dads don't want fuss. They want great food, good company, and no fuss about it. That's exactly what a Brazilian steakhouse delivers. The rodízio (all-you-can-eat) format means there's no menu deliberation and no waiting on orders. It's indulgent without being precious, a celebration meal that feels generous rather than stuffy. The restaurant was founded by Juarez De Conto and Alda Boiani, a Brazilian husband-and-wife team who helped bring churrascaria dining to the US, so the hospitality is the real thing. In other words, it's the kind of dinner that actually fits the occasion instead of just filling it.

Juarez and Alda came to Texas to share something from home. They never stopped.

In 1997, Juarez DeConto and Alda Boiani left Brazil and came to Addison, Texas with one purpose: to help introduce the gaucho tradition to America. They spent the next 20 years inside that kitchen, that dining room, that culture — learning what it means to make a guest feel genuinely at home far from their own.

Then in 2019, quietly and without fanfare, they opened something of their own. Not a concept. Not a brand exercise. Just a single dining room on Dallas Parkway where they could do things their way — with the cuts they believe in, the hospitality they grew up with, and the kind of personal attention that only happens when the owners are there.

"We came here to offer authentic Brazilian cuisine and gaucho experiences to North Texans with the highest quality meats, vegetables and customer service. The most important thing to us is our customers." — Alda Boiani, Co-Founder & CEO

"The owner came and talked to us, which is something I had never experienced before. For the price, it is a wonderful steakhouse."Tripadvisor guest — 5 stars

What an evening at 12 Cuts actually feels like

The green card sits at your table. When you're ready, you turn it over and the gauchos begin. Skewer after skewer arrives — picanha rock-salted and fire-roasted, filet mignon carved to your preference, lamb, sausage, and seasonal cuts that rotate with what's best. You eat at your own pace. No one rushes you. The salad bar is restocked quietly throughout the meal. When the grilled pineapple comes around, it's worth saving room for.

It is, in the best possible way, the kind of meal that makes you forget what time it is.
